Featuring round, rich notes of tobacco, charred oak and butterscotch with a spicy rye kick and peppery heat, rye whisky is rounded out by the smoothness of maple and sweet cherry to provide a weighty and balanced, yet complex, flavor profile.

Step 1: Mashing
Mash in 75 liters of water at 65°C
Rest at 63°C for 75 minutes
Rest at 72°C for 25 minutes
Step 2: Filtration
Separate the wort from the spent grain at 78°C
Step 3: Boiling (optional)
Duration: 10 min
Step 4: Cooling 22°C
Step 5: Fermentation

Whisky with amber color and slightly smoky hints. The taste is rich and complex with a well-rounded flavor, malty and slightly peaty. The finish is long, evoking oak and smoke.

Yes. We produce organic versions of our base and specialty malts, including distilling malts, peated malts, and rye malt. These are certified organic and meet the growing demand for organic whisky and spirits worldwide.
Both types of malts deliver high-quality performance in whisky and spirits production. The difference lies in sourcing and certification: organic malts are produced from barley grown without synthetic fertilizers, pesticides, or GMOs, and are certified to meet organic standards. Conventional malts follow the same rigorous quality and traceability checks but do not require organic certification.
